That’s the ingredient I have to work with and come up with recipes for this week…. Wild Boar.

What the heck does one do with Wild Boar?  Does it taste like pig?  Is it gamey?

Guess I’ll be spending my day off work, googling things again lol  Maybe I can put it in a pastry of some sort and turn it into pie or a turnover suitable of the estimated 28$ a plate price tag!  haha

Sometimes work makes me feel like I’m on the Iron Chef…  with all these strange ‘base’ ingredients.

The Start of a New Me - Or Finding the Old Me

I’m still debating where to post these types of entries - here, or in my AZ blog or over there –> in my AZ personal forum.  Maybe both places.  They’ll only be a portion of what is posted in my personal handwritten journal sitting here on my desk.  I have many of these journals - dating back 5 or 6 years, minus the sporadic workouts during the heights (lows?) of my Graves’ Disease when I could barely walk, let alone pick up a pen.

Brownies

The start of a post for brownies baking tips and recipes, as requested by Kattye!

I’ll start typing it out this evening and will have something ready for in the morning.  I’ll start with the basics - hints, tips, types of chocolates, pans, decorative toppings, etc - then move on to the recipes.  I’ll be posting my favourites and my friends’ favourites first off, then I’ll branch out into the more adventuresome or more difficult creations - like blondies, or jalapeno ( ! which are, surprisingly quite tasteful ), or turtle brownies, or a fancy Valencia brownie torte, etc.

Homemade brownies are pretty easy to make, and you might even have everything needed for a  basic recipe already in your pantry, cooking or baking supplies.  Sugar, all purpose flour, salt, baking cocoa/chocolate, oil, real butter, vanilla, eggs.

pre-workout snack

A little pre-workout snack of mine, on the days I am able to workout:

1/3 cup dry couscous

1/2 cup apple juice (or water)

1 tsp olive oil

1 pinch salt (less than 1/8 tsp!!!)

1 small fuji apple - diced small

cinnamon/apple pie spice to taste

1 tsp honey

Put juice, oil, honey, salt, cinnamon and apple in a small pan and bring to boil.  Remove from heat, stir in couscous.  Cover.  Let sit 5-10 minutes.  Stir.  Eat!

I eat about 3/4 of it about 30 minutes before a workout, then have the rest afterward with a protein shake.

Low Carb Protein Pancake recipe

I make these fairly often for breakfast or even for a snack-on-the-go to take with me.

LowCarb Oatmeal Pancakes

INGREDIENTS

1/2 cup old-fashioned oatmeal
1/4 cup low-fat cottage cheese (or tofu)
4 egg whites
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

DIRECTIONS


* Process the oatmeal first into powder in a blender or food processor. Add the cottage cheese, egg whites, vanilla extract, cinnamon, and nutmeg to the blender and on the highest speed setting, blend until smooth.


* Spray a nonstick skillet with cooking spray. Add the batter and cook over medium heat until both sides are lightly browned. (about 5 minutes a side or so - it depends on what size pan you use!!! and how thick you make your batter!!! )
